It is used in a wide variety of flavor and fragrance compositions, as well as in extensions of citrus oils.
Properties
It is not as lemony, but warmer than alpha-terpinene. It has a slightly bitter, herbaceous and citrus-like taste at concentrations greater than 40 ppm, and pleasant and citrusy at lower levels. To inhibit oxidation, synthetic dl-alpha-Tocopherol is added at a concentration of 400 parts-per-million.
